Cooking shiitake: an essential step
Traditionally eaten cooked, raw consumption of shiitake has grown for several years.
Lentin, a substance in shiitake, can cause a skin reaction called toxic “flagellum” dermatitis.
This substance is destroyed during cooking.
As such, it is essential not to consume this mushroom without having previously cooked it to heart.
We remind you that this cooking step is generally necessary for all dry mushrooms.
